Why is olive oil so good for us and our health?

The nutritional value and healing properties of olives have been known for a long time, and they are often used in cooking. The many positive effects of olive oil on the human body make this Mediterranean plant an essential food for a healthy diet.

Olives are low in calories while being rich in iron, vitamin E and phytochemicals, which help protect the entire organism.

Normally, most of us distinguish between green and black olives, but what exactly is the difference?

Green olives are generally harvested before full ripeness and therefore contain more polyphenols, while black olives are harvested when ripe and contain more oil.

Olives contain a lot of fat, most of which consists of monounsaturated oleic acid, which is associated with a reduced risk of cardiovascular disease. Of the various phytochemicals found in olives, the best-known is oleuropein, which is characterised by a strong antioxidant effect.

Phytochemicals in olives are generally associated with protecting the body against cancer and better calcium absorption in the bones.

Although it is often said that you should not fry in olive oil, this is not true. Olive oil has an advantage over other oils and is stable at high temperatures. When frying, a crust forms that prevents the oil from being absorbed by the food, which in this way actually retains its active ingredients. At room temperature, olive oil melts away from the food, leaving it healthier and less greasy. Using olive oil improves digestion and protects against gastritis and gallstones.
